I have a wonderful salad for you today – perfect for the Spring days. If only those Spring days would get here . . . right?
I know that kale isn’t quite as “trendy” as it has been but it’s still a great green for all it’s health benefits and for a different taste and texture in a salad. I love the sliced brussel sprouts, too, because I always love a crunch in my salad.
By the way, the males in my house gave it a thumbs up, too!
KALE AND BRUSSEL SPROUTS SALAD WITH TAHINI DRESSING
1 Bunch Kale, washed, dried and in bite sized pieces
Handful of sliced Brussel Sprouts
3 T sliced almonds or chopped walnuts
Handful of sliced grape tomatoes
1/4 cup shaved parmesan
1/4 Cup tahini
2 T red wine vinegar
2 tsp honey
Pinch of Red Pepper flakes
1/4 Cup water
Place kale, brussel sprouts and tomatoes in the bottom of a large bowl and mix together.
In a small mixing bowl, whisk together the dressing ingredients with the water until smooth and creamy. If your dressing is too thick (as some Tahini brands are thicker than others) add a little more water to taste. Set aside.
In a small pan over medium heat, toast the almonds, stirring frequently, until fragrant and turning golden.
Pour the dressing over the greens and mix well.
Add the almonds or walnuts and parmesan to the salad and toss.
To make it even better, add chopped fresh avocado just before serving!
