We know how healthy a chicken breast is to have for dinner. We also know how boring that can be. Well, not any more. As it’s the perfect time to fire up the grill, I have two really great ways to dress up your chicken to make it flavorful while keeping it light and healthy.
These are my two favorite marinades to turn your basic chicken breasts into something great for your next dinner. They are both super easy. Just make sure you a lot some time to let the chicken marinate in these wonderful marinades before heating up the grill. Let each marinate 2 hours to overnight for the tastiest chicken. Adjust the amount of chicken and marinade to fit your crowd!
4 boneless skinless chicken breasts
⅓ cup olive oil
¼ cup red wine vinegar
juice of 1 lemon
4 garlic cloves, minced
1 tbsp oregano
2 tsp thyme
1 tsp salt
1 tsp ground black pepper
Mix all the ingredients together in a bowl, except the chicken. Place the chicken breasts in a large Ziploc bag. Pour the mixed ingredients into the bag, seal tightly and coat the chicken breasts. Place in a bowl in the refrigerator and allow to marinate for at least 2 hours and up to overnight. Remove from the bag and prepare on the grill in your favorite way.

Tequila Lime Chicken Marinade
1/2 cup gold tequila
1 cup freshly squeezed lime juice (5 to 6 limes)
1/2 cup freshly squeezed orange juice (2 oranges)
1 tablespoon chili powder
1 tablespoon minced fresh jalapeno pepper (1 pepper seeded)
1 tablespoon minced fresh garlic (3 cloves)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 whole (6 split) boneless, skinless chicken breasts,
Combine the tequila, lime juice, orange juice, chili powder, jalapeno pepper, garlic, salt, and pepper in a large bowl or Ziploc bag. Add the chicken breasts. Refrigerate for a few hours or overnight.
Try either of these marinades next time you are looking for a tasty way to grill up those otherwise boring chicken breasts. These ways are definitely not boring!
