As promised I’m back with my second new Holiday treat. I got inspired from some Pinterest photos that came across my way. The recipe reminded me of my mom’s Martha Washington balls. Those were wonderful puffs of powdered sugar that were mixed, baked and rolled in the magical powdery stuff and just disappeared in your mouth. In this re-do I made the filling a little healthier and interesting by adding delicious mini chocolate chips. Feel free to keep them out, or better yet, substitute them with something just as delicious!
Have fun rolling, powdering and devouring! And, by the way, feel free to name these anything you like as well! I just came up with Powder Puffs due to the powdered sugar goodness, but it was a split second decision . . . .
Powder Puff Balls (for lack of anything else. If you think of a better name let me know!)
What you need:
1 cup of butter at room temperature (2 sticks)
1/2 Cup powdered sugar (Plus a little more for rolling and covering)
1 tsp good vanilla
2 1/4 Cups flour (I used coconut flour)
1/2 tsp salt
1 Cup mini chocolate chips (or more if they tend to disappear before they make it into the mix)
Preheat oven to 375 degrees. Line 2 cookie sheets with parchment paper. Don’t skip this step! It makes clean up soooo much more enjoyable! Mix butter, 1/2 cup powdered sugar and vanilla together with an electric mixer until good and fluffy. Next, add the flour and salt a bit at a time, mixing after each, and continue mixing until the dough comes together into a good consistency. Remove bowl from mixer and fold in the chocolate chips.
Roll the dough into little bite size balls and place on the cookie sheet. Bake them for 8-10 minutes until they are slightly brown. Take them from the oven and let them cool for just a minute. Roll the cookies in the remaining powdered sugar until they are good and coated.
As you can see I did a few at a time and rolled them around in the bottom of a gown until they were covered. Then place them on a rack to cool. If some of the powder shakes off you can always re-roll them.
There you have it. A lovely little Holiday treat ready for you to enjoy or share!
