Lately, I’ve found myself in a kind of new season. I have more afternoon time on my hands. With the First Son off to college, there’s a little less laundry (for now!) on a daily basis, and now that the Third Son plays sports at school, he and the Second Son are at school all day until at least 6 pm every day. The afternoon time I normally spent in carpool and driving all over town is now. . . . empty. It’s a little odd, I admit. (I’m thinking I might need to find some more work . . . ) For now, the most beautiful thing is that I am not constantly rushing around trying to get everything done every single day by 3 pm. I can actually focus and take my time and finish something. Mainly, I don’t have an excuse now to not prepare a good dinner for the two sons left at home. The first thing I hear when they come through the door is, “What’s for dinner?” You know that question. Sometimes it makes me absolutely cringe because I haven’t had time to even give it a thought. I’m thinking now, at least, I can make sure that’s something I can handle on a more regular basis.
Right now my kitchen smells amazing. I truly wish you were here to take a whiff. I have this wonderful smelling Rosemary Garlic Chicken with Potatoes in the oven and, based on the smells, I’m thinking this will be a good one. This recipe starts out in a roasting pan on the stove and then moves to the oven. I don’t know why, but there’s just something about a roasting pan that makes me happy. I can’t think of any meal from a roasting pan that is not just warm, comforting and delicious. And once you get the roasting pan in the oven you are all done. You can just sit back and relax.
I tweaked a Southern Living January 2014 recipe and came up with this:
ROSEMARY GARLIC CHICKEN WITH POTATOES
1/3 Cup Olive Oil
1 Lemon juiced
1 3.5 oz jar capers, drained
1 lemon sliced
10 garlic cloves, peeled and smashed
3 T olive oil
4-6 Chicken Legs
2 Chicken Thighs
2 Chicken breasts
2 lb small red potatoes
Pepper to taste
Preheat oven to 450 degrees. Stir together 1/3 cup olive oil, lemon juice, capers, sliced lemons, about 3 T fresh rosemary leaves and pepper. Place a roasting pan over 2 burners. Add 3 T olive oil and heat. Sprinkle chicken with salt and pepper and place, skin side down in pan. Add potatoes to pan. Cook about 10 minutes or so until chicken is browned. Turn chicken over and pour lemon mixture over the chicken. Remove roasting pan from stove and place in oven for 45 minutes or until chicken is done.
I confess mine stayed in the oven just a little too long waiting for one of the boys to take the Looooongest shower ever. So, my rosemary isn’t quite as fresh looking as I’d like, but the potatoes got this wonderful crunchy consistency that was really yummy. This is a good one. Give it a try!
First of all, I’m going to give a shout out to Petco. I know some folks are not fans of the big chain stores and I get that. I try to shop and support local when possible. Sometimes, you just have to go where you can, you know? Yesterday I had to pick up 24 large crickets. This is for our Leopard Ghecko, Elvis. Don’t ask. Somehow it is my lot in life to feed and take care of this creature. Lately, I’ve been slacking so I think he’s been starving for a while. At Petco yesterday I purchased crickets and then ran an errand. When I got home to feed Elvis all 24 crickets were dead. As doornails. I felt terrible, and annoyed with myself for the wasted time. So, today I returned to Petco to get more crickets. I was just chatting away about how I’d just been there and got home to realize that all the crickets were dead. I took full responsibility telling the clerk I must have left them in the car too long. That sweet clerk appeared with 30 crickets “on the house”. How nice was that? So, for that reason I’m giving a shout out to Petco. Thank you!
Next, I’m looking to make some changes here on the site. Hopefully, for the better! If my writing is sporadic it’s because I’m getting all techy and going for a new look.
